The six to eight week mark is just a guideline. We tend to like to under-promise and over-deliver on our time commitment. Often people use this wine for specific events and so giving us that buffer of a week or two helps us during our peak times of year.
Further, we have a number of proprietary processes that allow us to clear our wines faster and with a better outcome!
If you got an email saying your wine is ready, though, it's ready! Those notifications need to be sent out manually, so someone has personally checked that your wine is ready to bottle.
